PUMPKIN BREAD RECIPE (my version):

1 Tbsp ground flaxseeds
2 1/2 Tbsp water
15 ounces canned pumpkin puree
3/4 cup brown sugar
1/3 cup canola oil
1/4 cup soy milk

1 3/4 cups flour (gluten free)
1 tsp baking soda
1/2 baking powder
1/4 tsp salt
2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground cloves

1/2 cup pepitas

Preheat oven to 350F & grease loaf pan.
In small bowl combine flaxseed and water and set aside to thicken (this is your flax egg)
In large bowl, whisk together pumpkin, brown sugar, oil, flax egg and soy milk.
Add flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves on top of flour and stir gently to combine. Do not over mix.
Sprinkle th pumpkin seeds on top and then bake for about 1 hr 10 min, till a toothpick inserted in center comes out clean.
Let cool and enjoy :)
