✍🏻𝐈𝐍𝐆𝐑𝐄𝐃𝐈𝐄𝐍𝐓𝐒:
* Ghee(घी) - 1 Tbsp
* Peas(मटर) - 1 Bowl
* Coriander Leaves(धनिया पत्ती) - Some
* Ginger(अदरक) - Some
* Green Chilli(हरी मिर्च) - Some
* Ghee/Oil(घी/तेल) - 1 Tbsp
* Cumin Seeds(जीरा) - 1 Tsp
* Asafoetida/Hing Powder(हींग) - 1/4 Tsp
* Coriander Powder(धनिया पाउडर) - 1 Tsp
* Kashmiri Red Chilli Powder(कश्मीरी लाल मिर्च पाउडर) - 1 Tsp
* Turmeric Powder(हल्दी पाउडर) - 1/2 Tsp
* Dried Mango Powder(अमचूर पाउडर) - 1 Tsp
* Roasted Cumin Powder(भुना जीरा पाउडर) - 1/2 Tsp
* Black Salt(काला नमक) - 1/2 Tsp
* Fennel Seeds Powder(सौंफ पाउडर) - 1 Tsp
* Salt(नमक) - To taste
* Gram Flour(बेसन) - 1-2 Tsp
* Water(पानी) - Some
* Sugar(चीनी) - 1 Tsp
* White Flour/Maida(मैदा) - 2 Cup/Bowl
* Refined Oil/Ghee(रिफाइंड तेल/घी) - Less than 1/2 Cup/Bowl
* Water(पानी) - As required
* Oil(तेल) - For Frying

✍🏻𝐑𝐄𝐂𝐈𝐏𝐄:
𝐅𝐨𝐫 𝐆𝐫𝐞𝐞𝐧 𝐏𝐚𝐬𝐭𝐞, in a mixer jar, add Coriander Leaves, and Green Chili. Grind and make a fine paste. Then take it out into a bowl.
𝐅𝐨𝐫 𝐅𝐢𝐥𝐥𝐢𝐧𝐠, keep the pan for heating, add Ghee and fresh Peas, and roast them on a medium flame. Keep them lukewarm and coarsely grind them. In the same pan, add Ghee, Cumin Seeds, Asafetida/Hing Powder, Kashmiri Red Chili Powder, Coriander Powder, Turmeric Powder, Roasted Cumin Powder, Dried Mango Powder, Black Salt, Fennel Seeds Powder, Gram Flour, Salt and Powdered Sugar. Roast well on a slow flame. Then add Green Chutney and blended Peas and saute well. Mix them all & keep the filling cooling down. Then make balls of filling.
𝐅𝐨𝐫 𝐃𝐨𝐮𝐠𝐡, firstly, in a large bowl add Maida, Refined Oil, and Salt. Crumble the flour well with oil. Add Water and knead a dough. Rest for 30 mins.
𝐅𝐨𝐫 𝐊𝐚𝐜𝐡𝐨𝐫𝐢, make dough balls and flatten them. Place prepared Matar stuffing. Get the edges together and form a bundle (as shown in the video). Deep fry kachoris in the medium heated Oil until crisp and golden in color. Serve the Crispy Matar Kachoris with Sweet Chutney & Green Chutney.
