Recipe for the Nigerian Egg Roll - this is totally different from the popular Chinese Egg Roll or the common restaurant stye Egg Roll.

This particular egg roll is mostly sold as a street food in Nigeria and it's really filling especially when coupled with a chilled drink for snack or even with a cup of Tea or Coffee for breakfast.

Directions for the Nigerian Egg Roll Recipe:

In a large bowl, mix together the Flour, Baking powder, Salt, Sugar and Nutmeg
Use your fingers to blend the Magarine into the Flour until it's crumbly then make a well at the center, add the beaten Egg and mix till it's combined - the dough shoud look dry at this point
Add water a little at a time and work the dough till dough is soft and sticky sticky but still workable work the dough for about a minute then cover it and let it rest for about 15 to 20 minutes then work it again for a couple of seconds to a minute
Divide the dough into 5 then wrap each of the dough around each Egg and make sure it is tightly wrapped (please refer to notes above)
Fry on a medium heat turning over and over again until it's golden brown.
Serve hot or warm. Enjoy your egg roll !

Extra Notes on Nigerian Egg Roll Recipe;
*When wrapping the dough over the Egg make sure you wrap what you will be frying at a time (don't wrap everything at once if you will not be frying at once). Just cover the rest with a damp kitchen towel or a plastic wrap and the reason for this is that the action of the baking powder will continue to make the dough rise and this will cause the dough to loose it's snug fit around the Egg (the Dough will become soft) which in turn will make the Egg Roll a little difficult to retain it's shape when it's being fried.
