How to make a simple bacon & egg pie - yummy & you can't go far wrong with this combination! This New Zealand classic bacon and egg pie recipe is one of my go-to recipes for when the chickens have been doing their job properly! Full recipe written below.

Bacon and Egg Pie Recipe :
Line the bottom and sides of your baking dish with just over half of your pastry
In a bowl, mix 10 eggs with approx 400g of precooked, chopped bacon, 2-3 tablespoons of parsley (or as I did, substitute carrot tops - seriously, it works!) and season with salt & pepper.
Finely dice an onion and sprinkle on the pastry, followed by the eggy mixture.
If you like you can sprinkle cheese on top, or as I did some dollops of tomato relish, then roll out and cover with the remaining pastry.
Brush with a little milk (or an egg yolk) and cook in a preheated oven at 190oC for 25-30 minutes or until the pastry is browning nicely.
