Hey y'all! Finally I'm getting more into pickling and canning this season. I am committed to not letting my summer harvest and grocery produce go to waste or all compost. So this time I am QUICK PICKLING. I have had an abundance of tomatoes and cucumbers to preserve and pickle. So added them along with bell peppers, red onion, minced garlic, and pickling seasoning to a homemade hot brine. For the brine, I used white vinegar (with a splash of balsamic vinegar), water, salt and sugar. Simple and I can't wait to quick pickle and also can more of my harvest...so fun!
