Gajar is kanji is a fermented probiotic carrot drink. It is traditionally made with black carrots, but red/orange carrot can also be used.

Ingredients:

Black carrots 1/2 kg
Water 2 litres
mustard seeds (roughly grounded) 3 table spoons
Red chili powder 1 teaspoon
Rock salt 1 tablespoon or according to taste
Asafoetida 1/4 teaspoon
