RECIPE FOR KATHY'S HIGH VOLUME, LOW CALORIE FRITTATA

Ingredients (In order of use)
• 10-15 spears asparagus (frozen or fresh)
• 2 cups greens
• 1 ½ cups sliced mushrooms
• Spices-(I use Trader Joe's "Everything but the Bagel" or Salt and pepper or other spice blend)
• 1-2 Tablespoons water
• 3 large eggs
• ½ cup artichoke hearts, halved or quartered
• 1 medium tomato, sliced or 6 small tomatoes, halved
• 1 Tablespoon grated parmesan cheese
• 2-3 Tablespoons salsa, or smaller amount if using hot sauce (optional)

Instructions
• Apply cooking spray to 10" non-stick frying pan. (Other sizes OK)
• Place asparagus spears in pan
• Add greens to cover asparagus
• Add mushrooms, spread evenly
• Add spices
• Add water
• Cook covered over medium heat to soften vegetables
• Turn heat to low. Remove excess water from the pan
• Beat eggs and pour them over the vegetable mixture
• Arrange artichoke hearts in a ring around the edge
• Place tomatoes in another ring or spread evenly
• Sprinkle parmesan cheese over the mixture
• Add more spices (optional)
• Cook covered over low heat until eggs are firm
• Remove from pan with a spatula, add salsa, and enjoy!
