This simple Coconut Rock Cake, is a flavorful and delicious snack.

Ingredients
1 1/2 - 2 cups grated coconut
2 cups flour (baking or all purpose flour
2 tsp baking powder
1/2 tsp salt
1 tsp grated nutmeg
1 tsp cinnamon powder
1/4 cup butter
1/2 cup sugar
1/4 cup Currants or Raisins (optional)
1/4 cup mix peel & cherries (optional)
1/4 cup coconut milk (add milk gradually)
2-3 tsp vanilla essence


This recipe gives 6 -8 Perfect Rock Cakes
Bake at 170 degree or 350 for 25-30 minutes
