Italian-Style Passata Recipe:

Ingredients:
2 kg tomatoes
1 teaspoon salt
Fresh basil leaves
Olive oil

Instructions:
1. Thoroughly rinse the tomatoes.

2. Cut the tomatoes into quarters or halves, depending on their size.

3. Place the tomatoes in a pot over medium heat.

4. Let them simmer for about 20 minutes.

5. Strain the tomatoes to separate the liquid without crushing them.

6. Pass the tomatoes through a food mill, either manually or automatically.

7. Make sure to pass the skins and seeds through the mill multiple times to extract all the pulp from the tomatoes.

8. Add fresh basil leaves and a drizzle of olive oil to sterilized canning jars.

9. Fill the jars with the tomato pulp, leaving about 1 cm or 1/4 inch from the top.

10. Wipe the rim of the jars clean to ensure a proper seal.

11. Process the jars in boiling water for approximately 15 minutes.

12. Now you have homemade passata ready for the winter months.
