Easy Pea-sy Banana Bread. Hello everyone! I would like to share the recipe of my favorite homemade sweet moist and delicious banana bread. I bake this very often, so this recipe is pretty accurate. In the fall and winter, I usually add pecans or cranberries, and chocolate chips, yummmmmy! I am not kidding, I really believe you'll find this very easy to make and ingredients are normal standard items you may already have in your kitchen.

Ingredients you'll need:
3- 4 ripe bananas
1¼ cups light brown sugar
½ cup butter softened
1 egg
1 teaspoon cinnamon
1 teaspoon vanilla extract
¼ cup whole milk ( I used lactose milk)
2 cups all-purpose flour
½ teaspoon baking soda
1 teaspoon baking powder
½ teaspoon kosher salt

Place brown sugar in a large bowl and mash with butter with a potato masher. Add bananas and mash again, mash well. In the video, I used separate bowls, which was not necessary.
To the banana mixture, add the cinnamon and vanilla and mix well. Add in the egg and mix well, add the milk and mix well.
In another large bowl, add the flour, baking soda, baking powder, and salt and whisk together.
Combine the banana mixture with the flour and mix well.
Optional, doubly delicious, in this video I added ½ cup pecans and 1 cup blueberries and mixed well.
Grease a 9 x 5 loaf pan well with either solid shortening or cooking spray. No flour is needed. You can also line with parchment paper and no shortening or baking spray will be needed.
Pour mixture into pan and spread evenly with spatula or flat of a spoon.
Place the loaf pan on a flat baking pan to keep the bottom from burning.
Place in preheated oven at 350 degrees F (175 degrees C) and bake for 40-55 minutes.
Remove at 40 minutes and insert a toothpick in the middle and ends. If the toothpick is clean it is done. If the toothpick has dough stuck to it, place back in oven for another 10 -15 minutes.

Tips:
*If banana skin is brown or has many brown spots and you are not ready to bake just yet, remove peel and place in a freezer bag, and store in the freezer until ready to bake.
*I used lactose milk because my daughter is intolerant, regular whole milk is fine.
*I used ½ tsp of sea salt, I ran out of kosher, tasted good.
*Optional, doubly delicious if you have these other items such as ½ cup pecans, ½ cup walnuts, ½ cup raisins, 1 cup blueberries, 1 cup cranberries (cut in half) may be added. I recommend no more than 1 cup and only one or two of these ingredients.
*Pour into muffin pan small or large.
