Chicken Masala Teh Wali Biryani Recipe

Welcome to our kitchen! In this video, we’ll be making a flavorful Chicken Masala Teh Wali Biryani that combines aromatic spices with tender chicken and fragrant basmati rice. This traditional dish is perfect for special occasions or a cozy family meal.

Ingredients:

1 kg chicken, cut into pieces

3 cups basmati rice

2 large onions, finely sliced

2 tomatoes, chopped

1/2 cup yogurt

1/4 cup cooking oil or ghee

2-3 green chilies, slit

Fresh coriander and mint leaves, chopped

1 tablespoon ginger-garlic paste

1-2 teaspoons biryani masala (or garam masala)

1 teaspoon turmeric powder

1 teaspoon red chili powder

Salt to taste

Saffron strands (optional)

1/4 cup warm milk (for saffron)

Whole spices (bay leaf, cardamom, cloves, cinnamon)


Instructions:

1. Prepare the Rice:

Rinse the basmati rice under cold water until the water runs clear. Soak for 30 minutes, then drain.



2. Marinate the Chicken:

In a bowl, combine chicken pieces with yogurt, ginger-garlic paste, turmeric, red chili powder, and salt. Let it marinate for at least 30 minutes.



3. Cook the Chicken:

Heat oil or ghee in a large pot. Add sliced onions and sauté until golden brown. Remove half for garnishing.

Add the marinated chicken and cook until browned. Stir in tomatoes, green chilies, biryani masala, and cook until the tomatoes soften.



4. Prepare the Rice:

In another pot, bring water to a boil. Add the soaked rice along with salt and whole spices. Cook until the rice is 70% done, then drain.



5. Layer the Biryani:

In the pot with the chicken, spread half the cooked rice. Sprinkle chopped coriander and mint leaves. Layer the remaining rice on top. Drizzle with saffron-infused milk if using. Add the reserved fried onions for extra flavor.



6. Dum Cooking:

Cover the pot with a tight-fitting lid. Cook on low heat for 25-30 minutes to allow the flavors to meld and the rice to finish cooking.



7. Serve:

Gently fluff the biryani before serving. Enjoy with raita, salad, or your favorite side dish.


Tips:

Adjust spices to your taste for a milder or spicier dish.

For an extra rich flavor, add boiled eggs or fried potatoes as a layer.
