Birria is one of my all-time favorite dishes. That being said, I feel like it's a tradition shrouded in mystery. I've always wanted to learn how to make this unctuous, meaty bit o' deliciousness and I had no idea how to start, so I called in the big guns. INGREDIENTS...
MOLE ROJO
6 Dried Guajillo Chiles, stemmed and seeded
4 Dried Ancho Chiles, stemmed and seeded
2 Dried Pasilla Chiles, stemmed and seeded
1 medium Onion, roughly chopped
4 cloves of Garlic, peeled
2 medium Tomatoes, roasted
¼ cup Sesame Seeds, toasted
¼ cup Raisins
¼ cup Almonds, toasted
¼ cup Peanuts, toasted
¼ cup Pumpkin Seeds, toasted
2 Tablespoons Vegetable Oil
2 ounces Mexican Chocolate, chopped (or substitute with dark chocolate and a pinch of cinnamon)
½ teaspoon Ground Cinnamon
½ teaspoon Ground Cumin
4 cups Chicken or Vegetable Broth
Kosher Salt, to taste
Sugar, to taste (optional)

GOAT BIRRIA
4 pounds Goat Meat, assorted braising cuts
2 cups Mole Rojo
8 cups Lard
Banana Leaves (optional)
Kosher Salt, to taste

TORTILLAS
2 Cups Maseca corn flour (white or yellow)
1 ½ cups Water
1 tsp Kosher Salt

CHILE ARBOL SALSA
2 cups Dried Red Chiles (Chile de Arbol), stems removed
Water, for soaking
1 Tbsp Chocolate
½ teaspoon Cinnamon
½ teaspoon Black Pepper
½ teaspoon Dried Oregano
½ teaspoon Ground Cumin
¼ teaspoon Ground Cloves
1 teaspoon Granulated Garlic
Kosher Salt, to taste (start with ½ teaspoon and adjust as needed)

TOMATO CONSOME
4 cups Water (100% weight)
8 medium Roma Tomatoes (50% weight)
½ teaspoon Black Pepper
½ teaspoon Dried Oregano
½ teaspoon Ground Cumin
¼ teaspoon Cinnamon
¼ teaspoon Ground Cloves
1 teaspoon Granulated Garlic
Kosher Salt, to taste
