My 1976 Fuji Special Road Racer conversion to single speed bike using modern components

I've been a bike mechanic for about 6 years, working for various shops. This bike has been a project of mine since about 2018. It's seen several iterations, a custom paint job, and varied builds, ranging from a 3 x 8 gearing setup to its current state having two gears. The Fuji frame was built in 1976 as a road bike with 27" wheels. The size conversion makes it possible to put on modern 700x32cc tires and even larger options in the front. It was somewhat difficult at times to find modern parts that fit the sleek designs from long ago, but now that I have this bike to a single speed setup, it changed my mind on gears, riding style, and more.

The Fork is a 25.4mm threadless fork by Dimension
The Headset is a 25.4mm Cartridge bearing headset by Promax
Shimano Ultegra ST6700 shift levers for brake levers
Ritchey Logic Pro handlebars (I like mine quite wide)
Profile Design Stem (It was hard to find a 25.4mm clamp stem)
Bontrager Affinity TLR Rim Brake wheelset
Specialized Sawtooth Tires (32mm F/R)
Brooks C17 Saddle
Dimension Seatpost (I forgot the diameter)
Shimano XT PM8020 Pedals
Unknown Crankset from a friend (44T and likely a 170mm arm)
Sealed Bearing BB (Shimano 68mm x [I forget the width])
Shimano Cantilever brake for the front brake
DiaCompe Centerpull brake for the rear brake
Gear ratio using Surly Cogs:
44:16 for every day and shallow mountain roads
44:20 for steep or extended climbs and some mountain bike trails
