I am sharing this Daejeon Style tofu stew
recipe this time!
I have such a good memory of enjoying this
tofu stew back in the day in Daejeon.
You can add on noodles or potato starch noodles
to your liking.

[RECIPE]

Ingredients
500g(1pack) tofu, sliced into 1"thick
50g potato starch noodles, soaked to soften for 30min.
50g buchu(Korean chives), cut into 2" long
1/2 onion, sliced thick
1/2sprig leek, 1/4 sliced into rings, 1/4 bias-cut
1 red pepper, bias-cut
1 green pepper, bias-cut
1T cooking oil
2T red pepper powder
1T garlic, minced

seasonings)anchovy broth 2C, red pepper paste 1/2T
fish sauce 1T, soy sauce 1T, rice wine 2T

Preparation
1. Heat the oil in a pan, add leek and garlic to cook and add the red pepper powder and continue to cook.
2. In a bowl, combine all the seasoning ingredients to make the sauce; then place the sauce on the bottom of the pan, add the potato starch noodles, tofu and cook to boil.
3. Add the onions and lower the heat to med. and simmer for 10 minutes.
4. Finish to cook with the leek and peppers; continue to cook briefly. Garnish with chives.
