APPLE STRUDEL 酥皮苹果派

PREPARE CUSTARD CREAM
EGG YOLK 蛋黄 – 3 PCS
SUGAR 糖 – 3 TBSP
CORN FLOUR 粟粉 – 2 TBSP
MIX WELL 拌匀
MILK 牛奶 – 200ml
VANILLA ESSENCE 香草精 – ½ TSP
HEAT MILK 牛奶加热
WHISK IN HOT MILK 搅入热牛奶
STRAIN MIXTURE 蛋黄奶糊过滤
WHISK MIXTURE UNTIL THICKENED 不停搅拌至浓绸 - MEDIUM HEAT
REMOVE FROM HEAT 即可离火
POUR INTO BOWL 倒入碗
COVER WITH PLASTIC WRAP 盖上保鲜膜
CHILL冷冻 (4 HOURS)

PREPARE APPLE FILLING
RED APPLE 红苹果削皮切丁– 200g PEELED & FINELY CHOPPED
SUGAR 糖 – 3 TBSP
CINNAMON POWDER 肉桂粉 – ¼ TSP
BUTTER 牛油 – 1 TSP
COOK APPLE UNTIL SOFT 煮至苹果软化
POUR INTO BOWL倒入碗
COVER WITH PLASTIC WRAP盖上保鲜膜
CHILL 冷冻 (4 HOURS)

PREPARE PUFF PASTRY
BEATEN EGG 鸡蛋打散– 1 PC
SUGAR 糖 – ¼ TSP
FROZEN PUFF PASTRY 冷冻酥皮切半 – 10x10cm CUT HALF
BRUSH WITH EGG WASH 刷上蛋液
SPRINKLE COARSE SUGAR 撒上粗糖
BAKE 烤 (180°C - 10 TO 13 MINUTES)
COOL PUFF PASTRY 酥皮待凉

PREPARE WHIPPED CREAM
WHIPPING CREAM 鲜奶油 (200ml)
ICING SUGAR糖粉 (3 TBSP)
WHISK UNTIL STIFF PEAKS 打至硬性发泡
TRANSFER TO PIPING BAG 装入裱花袋

CUT PUFF PASTRY HALF 酥皮切半
FILL WITH CUSTARD CREAM 挤上卡仕达酱
ADD IN APPLE FILLING & WHIPPED CREAM 放入苹果馅&奶油
SERVE IMMEDIATELY OR CHILLED
