The best eggs for breakfast recipe! Shashuka is a Middle Eastern dish served for breakfast or lunch. This is my my version of the dish - Shakshuka Indian Style! The best way to have it is with Toasted Pav!!

Shakshuka Desi style

Ingredients :
Oil - 3 tbsp
Jeera - 1 tsp
Green chilli - 2 to 3 nos
Garlic - 3 to 4 cloves
Onion - 1 no
Tomato - 2 nos.
Salt - to taste
Red capsicum - 1 no
Haldi - 1/4th tsp
Red chilli powder - 1 tbsp
Coriander powder - 1/2 tbsp
Garam masala - 1 tsp
Eggs - 4 nos
Fresh Coriander - handful chopped

Method :
- Heat Oil in a pan over medium heat.
- Once the oil is hot, add cumin seeds & let it splutter.
- Add garlic & chopped green chillies. Saute for 30 seconds.
- Add onions & saute till translucent.
- Add tomatoes, salt, turmeric, red chilli powder, coriander powder & garam masala. Mix it in.
- Pour water to avoid the Masala’s from burning.
- Cook the tomatoes until soft over low to medium heat.
- Once the tomatoes are cooked, add capsicum & cook for a minute
- Add water to adjust the consistency of the masala.
- Simmer for 1-2 minutes.
- Once the masala is cooked, make space to crack the eggs in.
- Crack the eggs directly in the space. Sprinkle salt over the eggs.
- Cover & cook over low flame until the egg whites are just set but yolks are still runny( or cook the yolks according to your preference).
- Garnish with chopped fresh coriander.
- Serve with toasted Pav(Mumbai style bread) or your choice of bread.
Note : The yolk can be cooked according to your preference.
