RECIPES

Granola
Dry:
- 2 cups oats
- 1 cup raw almonds (or pecans, walnuts...)
- ½ cup unsweetened shredded coconut
- ½ cup raw pumpkin seeds (or
- ½ cup raisins
- 2 tsps cinnamon
- ¼ tsp sea salt
Wet:
- 4 tbsp almond butter
- 2 tbsp coconut oil
- ¼ cup raw honey

Directions:
- Preheat oven to 180'C / 350'F
- In a large bowl, combine all dry ingredients (except raisins)
- In a small sauce pan, over low to med heat, combine wet ingredients, stirring consistently for about 30 seconds
- Pour over dry mixture, gently fold to combine
- Pour granola mixture onto parchment lined baking pan, bake for 30 to 40 mins, or until golden brown
- Once ready and out of the oven, sprinkle raisins onto granola and stir to combine. Store in airtight container.

Berry Crumble

For the berries:
Approx 4-5 cups frozen / fresh berries of choice (About 400 grams)
1 tablespoon maple syrup (or a handful of chopped dates)
3 tablespoons water
2 teaspoons cinnamon

For the Crumble:
1 cup oats
1/2 cup almond flour or almond meal
1/2 cup chopped almonds, walnuts, or pecans
1 teaspoon cinnamon
1/4 teaspoon salt
1/4 cup melted coconut oil or butter
1/4 cup pure maple syrup

Instructions
- Preheat oven to 350 F / 180 C.
- In a large bowl, toss the berries with maple syrup (or dates), water, and cinnamon. Pour berries into greased 9x9 or 8x8 inch baking dish.
- In the same (now empty) bowl, add oats, almond flour, nuts, cinnamon, salt, coconut oil and maple syrup. Stir crumble topping together and pour into baking dish on top of berries.
- Bake for 40 to 45 minutes until apples are soft, covering pan loosely with aluminum foil halfway through to prevent over-browning.
