I always keep a few different kinds of tea in my pantry to use either as syrups or a mixer as an easy and cheap way to introduce different flavours in your drink - who doesn't love a boozy iced tea?!

*THIS MAY OR MAY NOT BE A SUBTLE HINT AT MY NEXT BOOK...* stay tuned.

CHAMOMILE SPRITZ
20ml (2/3 oz) chamomile and tarragon syrup
20ml (2/3 oz) Suze
20ml (2/3 oz) manzanilla sherry
90ml (3oz) dry sparkling wine
30ml (1oz) soda water
Glass: wine glass or highball
Garnish: tarragon sprig

LEMONGRASS TEA PUNCH
45ml (1 1/2 oz) white rum
15ml (1/2 oz) dark rum
15ml (1/2 oz) elderflower liqueur
20ml lemon juice
5ml sugar syrup
Top chilled lemongrass and ginger tea
Glass: large highball
Garnish: mint sprig and crystallised ginger (optional)

BOOZY ICED TEA:
45ml (1 1/2 oz) bourbon
15ml apricot brandy
20ml (2/3 oz) black tea syrup
30ml (1 oz) lemon juice
Glass: highball
Garnish: mint sprig
