Coconut Kolukattai is a traditional South Indian sweet dumpling, usually made during festivals like Ganesh Chaturthi. Here's a simple recipe to make this delicious treat:
Ingredients:
For the Dough:
1 cup rice flour
1 cup water
1 tsp oil (preferably coconut oil)
A pinch of salt
For the Coconut Filling:
1 cup grated coconut (fresh)
½ cup jaggery (adjust sweetness to taste)
¼ tsp cardamom powder
1 tbsp ghee (optional)
1 tbsp roasted sesame seeds (optional)
Instructions:
Preparing the Dough:
Boil Water: In a saucepan, bring 1 cup of water to a boil. Add a pinch of salt and 1 tsp of oil.
Add Rice Flour: Lower the heat and gradually add the rice flour while stirring continuously to prevent lumps from forming.
Cook the Dough: Stir until the dough comes together into a soft mass. Turn off the heat, cover the dough, and let it cool slightly so it can be handled.
Knead: Once cool enough to handle, knead the dough until smooth. Cover with a damp cloth and set aside.
Preparing the Coconut Filling:
Melt Jaggery: In a pan, melt the jaggery with a few tablespoons of water until it dissolves. Strain to remove impurities if necessary.
Add Coconut: Add the grated coconut to the melted jaggery and cook over low heat until the mixture thickens and begins to pull away from the sides of the pan.
Flavoring: Add cardamom powder and ghee for extra richness. Mix well. If using sesame seeds, stir them in now. Let the mixture cool.
Assembling the Kolukattai:
Form Dough Balls: Take small portions of the dough and roll them into balls.
Shape the Kolukattai: Flatten each ball into a small disc, creating a slight indentation in the center.
Fill: Place a spoonful of the coconut-jaggery mixture in the center.
Seal: Bring the edges together to form a half-moon shape or a modak shape (a pointed dome). Pinch the edges to seal the filling inside.
Steaming:
Prepare Steamer: Heat water in a steamer. Grease the steaming tray lightly with oil.
Steam Kolukattai: Place the prepared Kolukattai in the steamer and steam for 10-12 minutes on medium heat until the outer layer looks glossy and cooked.
Serve:
Once steamed, remove from the steamer and let them cool slightly. Serve warm and enjoy!
