In this episode of The Ox and The Fox, we travel down to Edisto Beach South Carolina, just south of Charlston South Carolina, and just north of Savannah Georgia. This video will be part 1 of 4 videos detailing Edisto Beach State Park, on Edisto Island. In part 1, We camp in our 4 seasons 2023 Arctic Fox 865 Truck Camper, loaded on our 2021 Ford F-350 Superduty dual rear wheel 6.7 diesel truck, at the Live Oak Campground site 99, on the North side of the Salt Marsh in the Edisto Beach State Park. We prepare a campfire, then cook at camp, a southern favorite Shrimp and Grits. We then explore the beach and video with our DJI mini 3 pro Drone, as well as ride our adventure motorcycles, a Honda XR150L, and a Honda Grom, to catch a sunset.

Southern Shrimp and Grits
Ingredients
4 cups chicken broth (for grits)
1 cup corn grits (I use Quaker 5-minute grits)
1 cup mild cheddar cheese, shredded (I use the block cheese, it tastes better to me)
4 tbsp. butter, cubed
10 oz. thick-cut bacon, cut into 1/2" slices
1 lb. medium shrimp, peeled, deveined
2 tbsp. minced garlic, (I use the one from a jar already minced)
1 tsp. dried oregano
1/4 tsp. paprika
1 tbsp. tomato paste
3/4 cup chicken broth (for shrimp sauce)
4 scallions, thinly sliced (I use chives from the spice section instead)
Juice of 1/2 lemon (I use lemon juice in the plastic bottle, already squeezed)

Directions 1. In a medium saucepan, bring 4 cups chicken broth to a boil. Reduce heat to medium-low and bring to a simmer. Whisk in grits and cook, whisking constantly, until grits have absorbed liquid and are very tender. Stir grits regularly so they don’t burn on the bottom. Turn hit off and stir in cheese and butter until melted; season with salt and pepper to taste. 2. Meanwhile, in a large skillet over medium heat, cook bacon, stirring occasionally, until crispy, about 8 minutes. Transfer bacon to a cutting board. Pour off all but 2 tablespoons bacon fat. Chop bacon into small pieces.3. In a large bowl, toss shrimp with garlic, oregano, and paprika; season with salt and pepper. Cook shrimp in skillet with remaining bacon grease, over medium heat, turning occasionally, until pink and cooked through, 4 to 6 minutes. Transfer shrimp to a plate.4. In same skillet over medium heat, cook tomato paste, stirring, until paste darkens, 1 to 2 minutes. Whisk in ¾ cups chicken broth and bring to a simmer. Cook, stirring occasionally, until sauce thickens and is reduced by about half, 4 to 5 minutes, season with salt and pepper to taste. Return shrimp to skillet and toss to combine. Stir lemon juice.5. Divide grits among plates. Top grits with shrimp, sauce, bacon, cheese and chives or fresh scallions.
