Adobong sitaw is a Filipino twist on the beloved adobo recipe. Instead of meat, this version uses long beans (sitaw) as the main ingredient. While pork belly isn’t always included, it is a great addition to level up the protein and flavor.
To retain a crisp-tender texture and vibrant green color in your adobong sitaw, parboi the yard long beans (sitaw) for 2-3 minutes before adding them to the pork adobo. While this adds a step, it ensures the beans won’t become tough when simmered in the vinegar-soy sauce mixture.
