How to get more sour in sourdough bread. The question I get asked more than any other is; "Ron, how can I get more sour in my sourdough bread?" I've produced this video to provide a few easy, but unusual, steps to accomplish just that. Using the same sourdough ingredients of flour, water, salt, and sourdough starter, the viewer will learn just how easy it is to have that addictive sourdough taste in their sourdough bread.

The mixture I use to feed my starter consists of 1/3 rye flour, 1/3 whole wheat flour, and 1/3 all purpose flour. I feel the rye flour and the whole wheat flour also contribute more 'sour' to my sourdough bread.

2 LOAF RECIPE
900 gr bread flour
600 gr water
200 gr sourdough starter
20 gr salt
450' 30 minutes in dutch oven with lid on
400' 12-15 minutes bread only in kitchen oven
