One Pot Chicken And Rice
5 boneless chicken thighs or preferred
oil
2 cups parboiled rice
4 1/4 cups chicken broth
1/4 onions diced
1 tbsp garlic finely chopped
1 lemon wedged
parsley chopped
Seasoning
(Add more seasoning if necessary according to the amount of chicken or rice)
4 tsp paprika
2 tsp garlic powder
2 tsp ground cumin
2 tsp Italian seasoning
1 1/2 tsp oregano dried
1 1/2 tsp chicken bouillon
2 tsp adobo
Combine the above seasonings. Divide the seasoning mixture in half. Season the chicken with 1/2 of the seasoning reserving the other half for seasoning the rice.
Start off by adding a small drizzle of oil to the chicken.
After seasoning the chicken add oil to a hot pan and brown the chicken on all sides for 2 minutes on each size.
Remove from the pan and set aside until later.
Using the same pan add onions and saute' until semi-translucent before adding the chopped garlic.
Combine both garlic and onions.
Add the chicken broth and combine.
Add the rice along with the seasonings and combine.
After 10 minutes add the chicken back to the pan, cover with a lid and allow to cook until the rice is tender and the chicken reaches 165F.
Serve with lemons and garnish with parsley.
