▣ Matcha Tiramisu|Ohyoo Cooking

▣ Ingredients:
Mascarpone 250g
Egg yolk 32g
Granulated sugar 30g
Milk 50g
Heavy cream 150g
Granulated sugar 12g
Water 120g
Matcha powder 4g
Marsala wine 15g
Finger cookie Suitable amount

▣ Mold size:15.5*15.5*6.5cm

▣ Method:
1.Toss the mascarpone cheese and set aside, make the custard, stir the egg yolk and sugar well, heat the milk about 60℃/140°F, add it while stirring.
2. Pour all the egg mixture back into the pot, turn on low heat, stirring constantly, heat to 80℃/176°F, then the state will become thicker, remove from heat, sieve and add to the mascarpone cheese, stir well.
3. Whip the heavy cream, whip it until it is thick and flowing, pour it into the mascarpone cheese paste and mix well.
4. To make the matcha liquor, add the sifted matcha powder to the warm water, stir well, and add the liquor according to preference.
5. In a glass bowl, squeeze a layer of cheese paste first, spread the finger cookies soaked in matcha liquor on the batter, then squeeze the cheese paste and smooth out, refrigerate for about two hours, sprinkle with matcha powder, ready to serve.
