Tips for making ‘the perfect burger’,

Bread: Whatever type of bread you prefer, such as butter enriched burger buns, sesame seed buns, classic burger buns, or "açma"(brioche like pastry) that you can find in Turkish bakeries, be sure to toast and crackle it a little first.

Sauces: Ketchup, mayonnaise, mustard all add flavour and act as insulation, thus adding flavour and texture to the crispiness of the hamburger bun. Big mac sauce or ranch dressing also adds another dimension. Recipes are below.

Cheese: You can melt cheese, such as burger cheese, string cheese, cheddar cheese, fresh cheese, and cheeses that do not melt like blue cheese but have a dominant flavour can be creamed with fatty dairy products such as cream and kefir to make a cheese spread. Another ides could be using the cheese as burger patty like halloumi.

Cured meat/ cold cuts: Dried meats such as pastrami, and smoked meats are good additions that will increase the flavour of your burger and add crunch. If the meat and cheese you paired are going well together, the pleasure you get will multiply. You should use aged meats with fresh cheeses, and fresh meats with aged cheeses. So, for example, when you use burger cheese with bacon, or aged cheddar with cured meat will keep the flavour balance at optimum.

Pickles and vegetables: Do not hesitate to use side products such as, lettuce, tomatoes, onions and pickles. Especially when you make a hamburger with a thin patty. Be sure to wash and dry greens and to season ingredients such as tomatoes, cucumbers and onions or flavour them with pickle juice.

Refika’s Perfect Burger Recipe (with Thick Patty)
Difficulty: Medium
Servings: 3-4
Cooking time: 6-8-10 minutes (up to your preferences)
Preparation time: 10 minutes

For the patty,
500 g single-ground beef, from ribs, 1.1 lbs
1 tablespoon molasses, grape, mulberry
1 tablespoon white wine vinegar
1 tablespoon seed mustard
1 tablespoon breadcrumbs
1 egg
A teaspoon salt
A teaspoon black pepper

3 slices cheddar cheese
1 red onion, sliced
6 slices bacon, beef or pork
3 gherkin pickles, sliced
BBQ sauce
Mustard
Burger buns

• Mix the patty ingredients in a bowl, roughly mix.
• Heat the cast iron pan. Sprinkle some water to see if it is heated enough. If it evaporates without bouncing, it’s ready.
• Divide and shape the patties, place them on the heated pan. Always make the patties a little wider than the bread so that they don't end up too small for the bun.
• Meanwhile, sprinkle some salt to red onions and add them to the pan. Cook, turning occasionally.
•Add in the bacons to the pan and crisp.
• Flip the burger patties. Place 2 slices of cheddar cheese on each patty and cover with a lid.
• Halve the buns and toast. Spread the BBQ sauce and mayo.
• Place the patties on bread. Layer caramelized red onions, pickles, bacons. Top with the bun.
• Then, halve the burger and press theburger on the pan ben brown. Thus, the Maillard reaction will occur, and the flavour of the meat will increase even more. The best version of the burger is ready with my small touches! Enjoy!
