I love this recipe. The Blue Hokkaido squash is very similar to traditional Kabocha squash. Both go very well over rice. The fig leaf rice complements the squash with it's subtle nutty flavor and aroma. This is a great recipe to get creative with if you like. You can add in greens and/or a variety of different toppings. Thanks for watching!
