Rice and cheese patties are made with only THREE ingredients. Enjoy them in any stew, be it mole, green salsa, red salsa, etc. Replace meat with these delicious Rice and Cheese Patties that are hearty, flavorful, and absolutely great. My family loves when I make these in a spicy green salsa with nopales, topped with a little cheese, cilantro, and maybe a little avocado.

What I also like to do is make these patties every time I have some mole. Sometimes we can give our family too much meat during the week, so this is a great way to include a meatless dish in our homes. Enjoy with a bit of mole, some beans, tortillas, and roasted nopalitos. These rice patties will satisfy your pickiest eaters.
