Smoked Chicken Thighs are easy and delicious. The first thing we do is take the Thighs out of the package and pat them dry with paper towels. Next trim them into nice square and cut any skin and fat hanging off the edges. On the bottom of the thigh (meat side) cut any big globs of fat off as well. Season the meat side first with AP Rub and then follow it with kinders hickory brown sugar rub. Then flip over so the skin is facing up and season the same way. AP first then Kinders. Smoke at 275 until the internal temp is 180 degrees then glaze for 10 minutes. Take a splash of apple juice and mix with 1/3 of a bottle of kinders hickory brown sugar bbq sauce. Glaze and let sit for 10 minutes. Cooking times will vary for each cook. Please use a good thermometer for perfect results. This took me around 2.75 total cook time.
