Today we show how to make an amazing omelette on the Blackstone Griddle! This easy recipe will help you make a delicious and huge omelette on the Blackstone Griddle! For this cook we used:

8 large eggs
1-2 tsp salt (preference)
1-2 tsp pepper (preference)
1/2 cup milk
Mild Cheddar Cheese - graded (roughly 1 cup divided)
Large tomato - diced
Bacon
Avocado - Sliced


Mix eggs, salt, pepper, and milk in a large bowl and set aside. Bring griddle to low heat (we were between 420-460 degrees). Slowly pour eggs on the griddle, ensuring they do not run all over! We kept them in a rectangle shape, and broke up the egg occasionally so the egg on top would cook (this we did to ensure even cooking without burning the bottom of the eggs). Once the eggs are nearly cooked through, add any ingredients you want on one side (we used cheese, tomato, and bacon inside). Once ingredients are in, carefully fold over the other half of the omelette. Pull from the heat and let cool. While cooling, place any other items you want on top (for us, it was cheese, tomato, and avocado, and a bit more salt and pepper). Serve with your favorite salsa or side sauce and enjoy!
