This eid, treat yourself to some Sheer Khurma! Sheer Khurma is one of the traditional Eid Recipes that is quintessential to the festivals of Eid, Saawan teej or rakshabandhan. Meethi seviyan or doodh seviyan as Sheer Khurma is popularly known, is made from Sheer i.e. milk and Khurma i.e. dates. Seviyan is roasted will in ghee and later added to reduced milk along with sugar and lots of dry fruits. What makes Sheer Khurma so special is its richness!

Recipe :

Sheer Khurma
Preparation Time: 10 minutes
Cooking time: 20-25 minutes
Serves: 3-4

Ingredients:
4 cups milk
100g fine sewayin
½ cup sugar
1 teaspoon cardamom powder
8 -10 strands of saffron
¼ cup almonds , slivered
¼ cup cashews , chopped
¼ cup pistachios , slivered
10-12 tablespoons dates , chopped
¼ cup raisins
¼ cup desiccated coconut
50g khoya
Silver foil
3 tbsp ghee

Method:
Heat the milk in a pan and cook till reduced to 2/3rd.
Meanwhile, heat 1 tbsp ghee in a pan. roast the chopped dry fruits till lightly coloured. Remove and set aside. In the same pan, add the desiccated coconut, roast on low heat till light golden in colour. Remove and set aside.
Hat the remaining ghee. Add crushed seviyan, roast on low heat till the Seviyan turns a golden colour. Add the saffron and the Seviyan to the reduced milk. Cook till the Seviyan is well cooked. Now add the sugar and the fried dry fruits and cook further for 4-5 minutes. Remove from heat. Add cardamom powder.
Garnish with chopped dry fruits and serve.
