There are many variations here, as in any dish. And my favorite version (as cooked by my grandmother) is impossible to prepare in Israel. There is no fish that we are used to in St. Petersburg. There, we cooked it from pike, perch, and bream. Nevertheless, there is a way. And I will show it to you. 1 kg of fish fillet (preferably 2-3 types of fish) 100g of onion 50g of sautéed onion 1 egg 150g of parboiled potatoes in "uniform" Proportion principle: additives (onion, egg, bread (or potatoes)) make up 30 to 40% of the weight of the fish fillet. Spices: salt, pepper, sugar Grind the fish, onion, and potatoes 2-3 times in a meat grinder. Add spices and egg to the stuffing. Knead well Form meatballs In a wide pot, place a pillow on the bottom: onion (onion peel), carrots, roots (if available), beets, fish head, bones, and skin. Add salt, peppercorns, and cover with water slightly. Place one layer of meatballs, make a layer of onion and carrots, and place the second layer. Add water if necessary. Bring to a boil, reduce heat to a minimum, and simmer for about 1.5 hours. Place the cooked meatballs in a dish, cover with broth, cool, and refrigerate for 8-12 hours.
