# Sweet Solo Serabi | A Solonese Traditional Soft Pancake
This sweet solo recipe is adapted from Chef Budi Tian which can be found on his @Bola Keluarga channel.
But as usual, with the outmost respect, I’ve changed some of its measurements according to personal taste.

The Main Ingredients
1100 ml thick coconut milk.
^^ 500 ml Kara coconut milk + Water, up to 1100 ml volume, or you can also use coconut milk from 1 large coconut, take its thick coconut milk up to a volume of 1.1 liters.
* ½ tsp Fine Salt.
* 1 Pandan leaves, tie a knot.
// NOTE: Bring the coconut milk to boils, after cooked the coconut milk shrinks to about 950 ml. After that, take the thick coconut milk (top part) about 300 ml for Ingredient B. Then the remaining thin coco. milk at about 650 ml is separated for Ingredient A. Set aside.
Ingredient A (Dough)
250 g Rice Flour (Bola Deli).
* 15 g of Tapioca Flour (Bola Deli).
* 15 g Wheat Flour.
* 650 ml Warm Thin Coconut Milk (taken from the main ingredient of coconut milk).
* 140 - 170 grams of sugar, suit your taste.
* 7 g or about 1 tsp Instant Yeast.
* ½ teaspoon Salt.
Ingredient B (Supporting Ingredients)
½ tsp Baking Soda, (optional or can be skipped).
// If you use Egg, please add the egg here, as much as 1 egg (optional).
Ingredient C (Areh Coconut Milk)
300 ml thick coconut milk (taken from the main ingredient of coconut milk)
Ingredient D (Topping)
Cheese, Jimmies, Banana, Jackfruit etc.
Note
Note for adding the egg, add the eggs together with baking soda. Stir well, then the dough is ready to be shaped. Ideally, 1 egg for one recipe is enough.
