Hello, I am Joconde.
In this video, I made curd, buttercream, and cupcakes with passion fruit.
These cupcakes so delicious that no words are needed. Personally, it was so good even without the passion fruit curd filling and just with buttercream.
I used frozen passion fruit. I chose it because I thought it would have better taste and aroma than commercial puree. Again, I highly recommend this recipe. Even just cupcakes is so yummy. And you will absolutely love the passion fruit buttercream.
The batter is rather thin, so I baked it in a regular conventional oven. The top of cupcake in a convection oven tends to tilt due to fan. However, if you use a convection oven, bake it on the highest level. After 8 minutes, turn the pan back and forth. When the surface of the batter cooks and becomes stable during baking, you can move it to the lower layer. Just be a little careful and it will come out great.
Passion fruit curd can be used as a filling not only for cupcakes and whipped cream cakes, but also for madeleines, macarons, and financiers. Create it and use it.
In the case of butter cream, be sure to whip it enough. That way, you can make a light and not buttery cream. I used a little bit of orange coloring for the piping cream in the middle.
