I will talk about how to enhance performance and learning by applying a growth mindset.

Sometimes we can feel a bit stuck in life and like we're not making any progress. Often this can be down to routine or the high standards we put on ourselves that prevent us from growing particularly if we seek perfection. As someone who used to be a perfectionist, I found this mentality of always having to be the "best" was really holding me back from making any progress at all and actually it was in the mindset of a student that enabled me to grow and improve. In order to effortlessly improve our lives and get unstuck it's in the art of learning and imperfection that enable us to continuously make progress and bring about the change we desire.

RYE BREAD ROLLS - so easy and delicious! 😋

Ingredients
(for the dough)
- 300g strong white bread flour
- 200g dark rye flour
- 10g salt
- 7g dried yeast
- 1tbsp treacle or maple syrup
- 1tbsp olive oil
- 300-350ml lukewarm water

(for the crust)
- 30g rice flour
- 1tsp sugar
- 1tsp yeast
- 1tsp olive oil
- sufficient water to form a paste (add bit by bit)
- extra rye flour for dusting

Method
1. Mix all the dough ingredients together in a large mixing bowl adding the water gradually to form a dough.
2. Kneed the dough for 10-15 minutes until it becomes smooth and elastic - it should not be too wet but a little sticky!
3. Leave the dough to rest and rise for 1 hour.
4. Meanwhile to make the crust combine all the ingredients together in a small bowl adding in the water gradually to form a thick paste. Set aside.
5. Once the dough has risen dust a surface with rye flour and divide into 8-10 pieces.
6. Tuck in the sides of the dough and flip over to form a ball then cup the dough and roll it around in circular motions with your hand - this will help to form little mini rolls (don't be too worried if they're not the same size too its nice to have a variety 😊 )
7. Place the rolls on a lined baking tray and add a generous layer of the crust on top of each of them.
8. Add a dusting of the rye flour and cover with a tea towel. Allow to rest again for 1.5 hours.
9. Preheat the oven approx 30 mins before the rolls have finished resting to 220 degrees C.
10. Remove the tea towel and the rolls should look a little 'cracked' on the surface which indicates they're ready for baking.
11. Bake the rolls for 15-20 minutes until golden.
12. Remove from the oven and allow to cool before slicing (they will smell AMAZING but don't let that tempt you to bite into one too soon as I did!! 😂 )
13. Serve and enjoy!
