The oat bars at Starbucks always looked so good we decided to make our own. This mimic recipe is chewy and deliciously choc-lately.

Oat bar:
3/4 cup unsalted butter
1 1/2 cups brown sugar

1 egg yolk
1 1/2 tsp vanilla
1 3/4 cup all purpose flour
2 1/4 cups rolled oats
3/4 tsp baking soda
3/4 tsp salt
Fudge:
1 1/2 cups chocolate (we used semi sweet chocolate chips)
1 1/4 cups sweetened condensed milk
1 1/2 tablespoons butter
3/4 teaspoons vanilla
Directions:
Cream the butter and brown sugar together. Once mixed, add the eggs and vanilla and combine to form a wet batter.
In a separate bowl whisk the flour, oats, baking soda, and salt together.
Add the dry ingredients 1/3rd at a time to the wet, making sure to scrape down the sides of the bowl in between additions.
Once mixed, add 2/3rds to a 8×8 baking dish. Spread the oat mixture to create an even layer.
In a pot over medium heat, add the butter, sweetened condensed milk, and sugar. Stir until all the ingredients melt and you get a smooth, lava like consistency.
Remove the chocolate fudge from the heat and allow to cool a couple minutes before stirring in the vanilla.
Pour the fudge over the oats in the baking tray and smooth out until even.
Once the fudge is smooth, add the remaining oat mixture in chunks on top of the chocolate.
Bake at 350 degrees for 25-30 mins.
