金榜居委会主任说：“明代时，就有金榜牛乳，但谁也不知道具体是从什么时候开始的，前辈的人说有了金榜村，就有了金榜牛乳。”
相传以前，金榜村耕地很少，当地村民大多靠养水牛，由于靠养水牛卖牛肉，周期较长，难以维持一家人的生计。一些金榜人便开始以挤卖水牛奶为生，然而水牛只有在哺乳期才有牛奶，可是哺乳期有奶又有小水牛，小水牛吃了奶后，水牛就没有更多的奶让村民拿到市场上卖了。因而，村民一般是等到水牛产下小水牛之后没多久，就将小水牛杀了卖肉，再挤水牛的奶上市场卖，因而，金榜牛乳又称为“杀子取食”的中华小吃。
由于市场需求不稳定，有时候，村民挤出牛奶后却卖不掉。然而受条件限制，牛奶保鲜不易，金榜人就用醋和食盐将牛奶制成晶莹透明的牛乳片———金榜牛乳来保存。经过一代代人改良，金榜牛乳以地道甘香、清热下火、老少咸宜而成为顺德特产、中华名小吃。
现除大良镇内的数十家店铺制作经营外，香港、澳门、新加坡、马来西亚等华侨制作商户，亦以“金榜牛乳”标名以广招徕
