金榜牛乳始于明代,原产大良金榜村。为雪白圆状薄片,味略咸而甘甜可口,正气补身,有坠火功效,可佐粥下饭。
金榜居委会主任说:“明代时,就有金榜牛乳,但谁也不知道具体是从什么时候开始的,前辈的人说有了金榜村,就有了金榜牛乳。”
相传以前,金榜村耕地很少,当地村民大多靠养水牛,由于靠养水牛卖牛肉,周期较长,难以维持一家人的生计。一些金榜人便开始以挤卖水牛奶为生,然而水牛只有在哺乳期才有牛奶,可是哺乳期有奶又有小水牛,小水牛吃了奶后,水牛就没有更多的奶让村民拿到市场上卖了。因而,村民一般是等到水牛产下小水牛之后没多久,就将小水牛杀了卖肉,再挤水牛的奶上市场卖,因而,金榜牛乳又称为“杀子取食”的中华小吃。
由于市场需求不稳定,有时候,村民挤出牛奶后却卖不掉。然而受条件限制,牛奶保鲜不易,金榜人就用醋和食盐将牛奶制成晶莹透明的牛乳片———金榜牛乳来保存。经过一代代人改良,金榜牛乳以地道甘香、清热下火、老少咸宜而成为顺德特产、中华名小吃。
现除大良镇内的数十家店铺制作经营外,香港、澳门、新加坡、马来西亚等华侨制作商户,亦以“金榜牛乳”标名以广招徕

Legend has it that in the past, Jinbang Village had very little arable land, and most of the local villagers relied on raising water buffaloes. Due to the long cycle of raising water buffalo to sell beef, it was difficult to maintain a family's livelihood. Some Jinbang people began to milk and sell buffalo milk for a living. However, buffaloes only have milk during lactation, but during lactation there are milk buffaloes and buffaloes.
