Chicken Tikka
Chicken tikka is a very popular dish originating from the Indian subcontinent during the Mughal era. It is traditionally made with small pieces of boneless chicken, grilled over charcoal after marinating in tikka masala and dahi (yogurt). Using mayonnaise is a popular restaurant hack to get more succulent kebabs. I tried this hack on the tikka recipe and the results were simply outstanding!

Ingredients
2kg | boneless skinless chicken
¼ cup | mayonnaise
2 Tbs | tikka masala
2 Tbs | oil
2 Tbs | lemon juice
½ tsp | salt
Method
Cut chicken into 1-2 inch even sized cubes
Marinate the chicken in the above ingredients overnight, or at least 3-4 hours
Flat, medium sized stainless-steel skewers are best for this recipe
The skewers are placed 2-3 inches above the fire or hot coals for slow cooking
Rest the cooked tikka on Naan bread
Enjoy with mint chutney and finely sliced onions
Leftover chicken tikka can be cooked in butter chicken curry and served with Basmati rice
