Bacon Wrapped Pork Tenderloin Sandwich
It’s football season and it’s tailgate time! This recipe is perfect for sharing at the big game or anytime really! This sandwich was crazy good! Watching those carbs? Don’t use the bun. Slice into bite size pieces and enjoy!
We cooked these using indirect heat at 275 degrees on our Big Green Egg. Once the pit is coming up to temp, prep the tenderloins. Remove any fat and silver skin. Inject both tenderloins with the hot sauce. Season with the AP Rub and BBQ Rub. Wrap in bacon and season the top with an even coat of BBQ Rub. After 15mins place them on the smoker until the internal temp reaches 145 degrees and the bacon is crispy. Once temp is met, coat with the Killer Hogs Vinegar Sauce. Remove from heat and let rest for 15 mins before slicing.
• 2 - 1.25LB Pork Tenderloins
• 1/2 Cup of Hot Sauce
• 4 TBSP of your favorite All Purpose Rub
• 2 TBSP of your favorite BBQ Rub
• 1/2 Cup of Killer Hogs Vinegar Sauce
• 1LB of Thin Sliced Bacon
Slaw Recipe
• 2 Cups of Matchstick Carrots
• 5 Celery Stalks Sliced Very Thinly
• 1 Bunch of Green Onions Rough Chopped
• 2/3 Cup of Apple Cider Vinegar
• 1/3 Cup of Olive Oil
• 2 TBSP of Honey
• 2 TSP of Dijon Mustard
• 1 TSP of Celery Seed
• 1 TSP of Malcolm’s Gyro Hero
Once chopped place the vegetables in a bowl. In a separate bowl mix the wet ingredients with the Celery Seed and Gyro Hero. Pour the dressing over the vegetables and mix until incorporated well. Place in the refrigerator for at least one hour.
