This weekend, I was craving some Vietnamese dishes, so I decided to prepare a few of our favorites, including my husband’s beloved grilled pork and spring rolls, known in Vietnamese as Bún Chả Chả Nem. *Pork & Shrimp Spring Roll Recipe (Chả Nem)*
Ingredients:
- 1 pound ground pork
- 1 pound Pacific white shrimp
- ½ cup minced shallot
- ½ cup sliced black fungus (wood ear mushrooms)
- 1 pound bean sprouts
- 2 packets vermicelli or mung bean noodles
- 1 egg
- 1 tablespoon fish sauce
- ½ tablespoon chicken bouillon powder
- ½ tablespoon white sugar
- 1 teaspoon black pepper
- 1 package egg roll wrappers
- Canola or vegetable oil for frying

Cooking Instructions:
1. Combine all ingredients in a large bowl and mix well.
2. Soften the egg roll wrappers by covering them with a damp paper towel.
3. Place a heaping tablespoon of filling onto each egg roll wrapper. Fold the sides in, then roll tightly to seal.
4. Continue rolling all the spring rolls and set aside.
5. Heat oil in a shallow pot over medium-high heat and fry the spring rolls until golden brown and crispy. Drain on paper towels.

*Grilled Pork Recipe (Thịt Nướng Bún Chả)*
Ingredients:
- 1 ½ to 2 pounds pork shoulder or pork butt, sliced 1/3 inch thick
- 4 pounds pork belly, sliced 1/3 inch thick
- 1 tablespoon Chinese five spice powder
- 1 large shallot, finely minced
- 6 cloves garlic, finely minced
- 1 tablespoon chopped lemongrass
- 1 teaspoon white sugar
- 3-4 tablespoons fish sauce
- 1 tablespoon sesame oil
- 1 tablespoon honey
- 1 tablespoon canola oil
- 1 teaspoon cracked black pepper

Cooking Instructions:
1. Place all ingredients in a large bowl and mix to combine. Marinate for a few hours or overnight for best results.
2. Grill the marinated meat over charcoal for the best flavor. Alternatively, cook it in a frying pan on the stove or bake in the oven.
