Recipe for Zero Sugar Green Tomato Relish
Ingredients:
2kg green tomatoes
450g white onion (about 6 medium size)
350g red pepper
6 medium size garlic cloves
250g cooking apples (2 medium size)
3-4 medium size chilli peppers (your choice how hot you want it)
250ml raw apple cider vinegar ideally unpasteurized
1 tablespoon of table salt
2 teaspoons of ground cumin
A bunch of fresh coriander

Directions:
1. Roughly chop the green tomatoes, onions, red bell peppers, and apples (with peel). Add them all to a large pot.
2. Mince the garlic and add it to the pot.
3. Pour in the apple cider vinegar and add the salt.
4. Bring the mixture to a boil over high heat, then reduce to low and simmer for 1 hour and 30 minutes, stirring regularly.
5. While simmering, finely chop the chilli pepper (removing seeds), and chop the coriander.
6. Add chilli pepper, coriander and cumin to the pot and simmer for another few minutes.
7. Using handheld blender chop the ingredients until you get a jammy consistency
8. Put your jam jars including lids in the over for 15min on 180 degree Celsius to sterilise them.
9. Transfer piping hot relish to your jam jars and close the lids. They should seal without problems but if you are unsure you can boil the jars in water covering them completely in water for about 20 min to be double sure they are properly closed.
10. Store in a cool place until you want to eat them.
11. Once open eat within few days and keep in the fridge.
