Shrimp and Pork Wonton Soup from scratch! (餛飩湯)

Wonton Ingredients:
1/2 lb pork
1 stalk green onion
1 tablespoon soy sauce
1 egg white
1/2 tablespoon rice wine
1 tablespoon chicken broth
1 teaspoon sesame oil
1 teaspoon minced ginger
shrimp sliced in half, sprinkled with a bit of salt
1 tablespoon corn starch
wonton wrappers

Soup Ingredients:
Shrimp tails or shells
1 can chicken broth
14 oz water


Toppings (mostly optional):
Pickled mustard stems
soy sauce (recommended minimum)
tiny tiny dried shrimp (recommended minimum)
white pepper (recommended minimum)
scrambled egg
bok choy (totally optional)
roasted seaweed (recommended minimum)

1. Take all of the ingredients for the wonton filling (pork, green onion, soy sauce, egg white, rice wine, chicken broth, sesame oil, minced ginger) and place it all in a bowl
2. Mix the wonton filling until the fat in the ground pork begins to smear along the side of the bowl and are no longer visible as individual pieces in the ground pork
3. Wrap the wontons (see video)
4. Take any shrimp shells from preparing the shrimp and fry it off in a bit of cooking oil
5. Cover the shrimp shells with chicken broth and water and simmer for 10 minutes
6. Remove the shrimp shells from the broth and discard them
7. Prepare the serving bowl with the toppings of your choice
8. Boil the wontons in a separate pot of water to maintain a clear broth, or just simply boil in the broth if you don't care about the clarity of the broth.
9. When the wontons float, spoon the broth and wontons into the prepared bowl.
10. Top the bowl with vegetables (or not).
11. Enjoy!
