Let’s make a hearty Puerto Rican Asopao de Camarones! 🤤
Ingredients:
1lb shrimp, deveined, shell and tail off and set aside
1/4 cup sofrito
1 tbsp olive oil
1/3 cup tomato sauce
1/2 packet Goya sazón
Oregano to taste
Salt to taste
Pepper to taste
1/2 cup medium or long grain rice
5 cups of shrimp broth, plus an extra cup of water
2 tbsp chopped pimientos
Broth:
5 cups water
2 chopped bell peppers
1/2 chopped white onion
Shrimp shells/tails
Salt + pepper to taste
BROTH SUBSTITUTE: 2 fish bouillons + 6 cups water
NOTE: When cooking my shrimp, I added 1/2 cup of the shrimp broth. Asopao will be cooked over medium/high heat, covered. 🙏🏽
