Detailed Recipe:
Ingredients:
1 cup rice, washed and soaked
1/2 cup split yellow moong dal, washed and soaked
2 cups spinach leaves, washed and chopped
1 onion, finely chopped
1 tomato, finely chopped
2-3 green chilies, finely chopped
1-inch ginger, grated
2 cloves garlic, minced
1 teaspoon cumin seeds
1/2 teaspoon turmeric powder
1/2 teaspoon cumin powder
1/2 teaspoon coriander powder
Salt to taste
Water as needed
1 tablespoon ghee or oil
Fresh coriander leaves for garnish
Instructions:
Prepare Rice and Dal:

Wash and soak rice and split yellow moong dal separately for 30 minutes.
Drain the water and set aside.
Sauté Aromatics:

Heat ghee or oil in a pressure cooker. Add cumin seeds and let them splutter.
Add finely chopped onion, green chilies, minced garlic, and grated ginger. Sauté until onions turn translucent.
Add Tomatoes and Spices:

Add finely chopped tomatoes and cook until they turn soft and mushy.
Add turmeric powder, cumin powder, coriander powder, and salt. Mix well and cook for a minute.
Add Rice, Dal, and Spinach:

Add soaked and drained rice and moong dal to the cooker. Mix well with the masala.
Add chopped spinach leaves and stir to combine.
Pressure Cook:

Add water as needed to cover the rice-dal mixture. Close the pressure cooker lid and cook for 3-4 whistles or until rice and dal are cooked.
Serve and Garnish:

Once the pressure releases naturally, open the lid and give the khichdi a gentle stir.
Garnish with fresh coriander leaves and serve hot with yogurt, pickle, or papad.
