The pork belly barbecue was one of the main attractions of the Confraria do Churrasco SG, which took place in March 2023, in its 12th edition, at Arena SG, in the city of Gramado, southern Brazil. There were 200 kilos of pancetta selected and prepared by the barbecue masters Arthur and Juliana (@arthurejuliana), a true couple, passionate about barbecue.

Work began on Friday at the end of the afternoon, when the meats began to be prepared. After carefully cleaning the pieces, Arthur, Juliana and their team covered the pancettas with a generous layer of medium salt, to dehydrate them. In the early hours of Saturday, the day of the event, they removed all the salt and seasoned the pieces with salt, herbs, chimichurri and lemon pepper.

When the sun was coming up, the pork bellies went into the fire. And, around 11 am, they were ready, with crispy skin and well-roasted meat, to the delight of the public. Who quickly savored the entire roast, which was fully up to the great Confraria SG event which, in this edition, brought together more than 3 thousand people.
