ความผันผวนของราคาผัก เป็นหนึ่งในปัญหาทางเศรษฐกิจที่ทุกประเทศต้องเผชิญ อันเนื่องมาจากปัจจัยหลายประการ ไม่ว่าจะเป็นสภาวะแวดล้อม อุปทาน อุปสงค์ สถานการณ์ทางสังคม วัฒนธรรม และการเมือง
สิ่งหนึ่งที่ส่งผลอย่างมาก ก็คือความต้องการของผู้กิน ที่มีความกังวลต่อแหล่งที่มาของอาหาร และผลกระทบที่อาจเกิดต่อสิ่งแวดล้อม ทำให้กลายเป็นปัจจัยสำคัญต่อผู้ผลิต ที่ต่างต้องตอบสนอง
ไม่ว่าจะเป็นการปลูกในฟาร์มแบบออแกนิค การปลูกผักแบบไฮโดรโปนิกส์ (Hydroponic) และการปลูกพืชบางชนิด ก็ทำได้ดีแค่ในบางพื้นที่เท่านั้น ยิ่งเป็นการทำให้ผักกลายเป็นพืชที่มีราคาแพงมากกว่าเดิมค่ะ
