Skirt Steak is what I call one of the "character" cuts. It doesn't have the glamor or showmanship of Filet Mignon, Ribeye, or New York Strip, but it also doesn't have the cost.

What it does have, is some great flavor, and when treated right, a great texture and tenderness. It's also one of my favorite cuts of steak to marinate - which is exactly what I do here. It's a very simple marinade with just a few ingredients:
Mustard
Balsamic Vinegar
Worcestershire Sauce
A bit of Maple Syrup or honey
And some garlic

If you let the skirt steak sit on that marinade for a few hours, the flavors infuse with the meat, and make it a bit more tender. Here I also show you how to grill the steak off. Granted, I had to use a grill pan, but it's the same techniques for outside on the real thing.
