Sinantolan (also known as Ginataang Santol, is made up of finely grated santol fruit rinds as it's main ingredients. A more spicy version of this recipe can be done by using siling Labuyo (Labuyo chili) instead of the siling haba (Green chili). This dish has originated from the Southern part of Luzon province in the Philippines, particularly from the Quezon and Bicol regions. What makes this dish really fascinating is how the combination of the spicy, salty, and sour and sweetness of the Santol fruit compliments each other.

Ingredients:
7 to 8 pcs Santol (Large)
1 pc Ginger
4 cloves Garlic
1 pc Onion
3 pcs Green Chili (Siling Haba/Pangsigang)
1/4 kilo Pork (Liempo)
1 tbsp Shrimp Paste
1 tbsp cooking oil
1 1/2 Cups 1st extract of Coconut Milk (Kakang Gata)
1 Cup 2nd extract of Coconut Milk (Pangalawang Piga)
Salt and Pepper to taste


Directions:
1. Prepare a bowl filled with water and salt. We'll put all the peeled Santol fruit prior to grating to prevent the fruit from turning brown (oxidizing)
2. Grate each santol fruit rinds/flesh and discard the seeds
3. Once finished grating all the Santol fruit, remove the juice from the rinds by manually squeezing by both hands and wash 3 times to remove the bitterness and resin.
4. Peel and mince both Garlic, Onion, and Ginger
5. Cut Green Chili into thin diagonal slices
6. Cut Pork into thin slices
7. Pour in cooking oil once cooking pan/pot is hot
8. Saute ginger until fragrant, then stir in minced garlic and after a minute, stir in minced onion
9. Wait until the onion turned translucent then put in the Shrimp Paste
10. Once the Shrimp Paste has been cooked, put in the Pork and continue sauteing
11. Stir in pepper once the pork has turned golden brown
12. After a minute or two, combine the 2nd extract of Coconut Milk together with the Santol Rind and Green Chili
13. Cover and let simmer for about 2 minutes or until the Coconut Milk has reduced
14. Pour in the 1st extract of Coconut Milk and stir in salt to taste
15. Continue cooking and let simmer until Coconut Milk has completely reduced.
16. Turn off the stove and serve.
