Saffron Rice: Tahchin Recipe | Chicken and Eggplant dinner recipe

Try this easy dinner recipe for with saffron rice and eggplant and chicken. This dish called tahchin and it is a popular persian food. In this video I showed a super easy saffron rice recipe with chicken and eggplant that you'll love. In this recipe you can use cooked rice leftover. It is very economic and efficient recipe to reuse cooked rice leftover. For the filling I have used chicken and eggplant while you can use any other ingredients you like. The combination of the saffron rice with eggplant and chicken as well as yogurt and egg make tahchin very tasty and special. Saffron is the main ingredient in tahchin recipe. You should make the saffron water first and then add the saffron water to the rice, egg and yogurt. Dinner is very important meal that you have all your family together, so make the dinner special for the whole family. Egg and yogurt make the taste of the saffron rice very different and yummy. This recipe is great for invitations and you can surprise everyone with this special saffron rice cake. For decorating this saffron rice cake you will need barberry to be mixed with rice and saffron for the top of the tahchin. Barberry taste sour so we do need to add some sugar to make the saffron rice taste smooth.

Cooked Basmati rice 2 cups
Yogurt 1.5 cups
3 eggs
Saffron water

▶For the chicken and eggplant filling:
Chicken 500g
3 Eggplants
1 Onion
Salt and pepper
Saffron water

▶For the decoration:
Barberry
Butter
Almond and pistachio slices
Saffron water
Sugar 2 sp
