Lauki barfi or lauki launj can be prepared for any festivals and can be consumed while fasting. Bottle gourd burfi made out of mawa, ghee and loads of dry fruits tastes delicious.
Bottle Gourd Burfi Recipe, Ghiya ki barfi, lauki ki barfi with khoya, lauki ki barfi ki vidhi,
Ingredients
Bottle gourd – 1 (1 kg)
Sugar – 1.5 cup (300 grams)
Mawa – 250 grams
Ghee - ¼ cup
Cashews - ½ cup
Almonds – 7-8
Green cardamom – 6-7
Directions

Getting ready:

1. Peel and roughly chop the bottle gourd. Grate the bottle gourd chunks in the food processor and transfer them to a bowl. Now squeeze out the excess water from the grated bottle gourd.

2.Chop down some dry fruits. Finely crush the seeds of the green cardamom using mortar pestle. Grate the mawa in a bowl and evenly grease a plate with some ghee to set the barfi.

Making:
3.Take grated bottle gourd in a wok and place it on flame. To it add 2 tsp of ghee and mix well. Cover and cook the bottle gourd on medium-low flame for 7 to 8 minutes. Then add sugar and stir thoroughly. Cover again and cook for few more minutes and keep checking occasionally.

4.When the gourd releases juice, cook it in open on high flame until its juice gets evaporated. Keep stirring at after every 2 minutes. Add the remaining ghee in it as well and roast for a minute or so.

5. Add the grated mawa in the wok and cook until it blends well to the mixture. Let it turn thick in consistency. Further add cashews and cook for few more minutes until it turn thick in consistency. Then add crushed green cardamom and mix thoroughly.

6. Turn off the flame and transfer the prepared mixture on the greased plate. Spread it out evenly and sprinkle almonds on the top. Keep it aside to set and later cut in desired shape and chunks. Slightly heat the plate from bottom and transfer the barfi chunks. Bottle gourd burfi is ready.

Serving:
7.Serve these mouth-watering bottle gourd barfi after any meal as a dessert or have them whenever you crave for something sweet.

Suggestion
You can substitute mawa with milk powder also. Take 1 cup of milk powder and add it into the bottle gourd mixture and cook it until it turns thick in consistency.
