Ingredients:
-3 tbsp. extra virgin olive oil
-454g ground veal (beef, chicken or turkey may also be used)
-a sprinkle of dry white wine (sorry, I forgot to mention the wine in the ingredients slide)
-900g ground tomatoes
-salt & pepper to taste (chili may also be added)
-175g shredded mozzarella cheese
-135g grated Parmesan cheese
-4 medium zucchini, sliced thinly
Chopped finely:
-1 carrot
-1 celery stick
-1 onion
-2 garlic cloves
-4 tbsp. fresh parsley (a handful)
Method:
1. Wash zucchini. Cut off the ends. Slice them lengthwise into thin slices. You can use a
sharp knife, a mandolin or a peeler.
2. Line a large tray with parchment paper. Scatter the sliced zucchini on the tray. Sprinkle with salt & black pepper to taste.
3. Bake in preheated 380F/193C oven for 10 minutes. Position tray on second to last oven rack.
4. Once baked, remove the tray from your oven & place it on your counter. Let the sliced zucchini cool.
5. Peel, wash & finely chop the vegetables.
6. Let’s make the sauce. Heat a large skillet over medium-high heat. Add olive oil. Add the chopped vegetables, salt & pepper to taste. Reduce the heat to medium-low. Cook for 2 minutes, stirring frequently.
7. Add the ground veal. Break it up in bits. Add salt to taste. Cook over medium-low heat for 10 minutes, until browned.
Add a sprinkle of dry white wine to tenderize & add flavor to the meat.
Stir continuously & cook for 2 more minutes.
8. Add ground tomatoes & salt to taste. Cover & cook over low heat for 20 minutes, stirring occasionally.
9. While the sauce is cooking pat dry the cooled, sliced zucchini with a paper towel.
10. Once the sauce is ready, assemble the zucchini lasagna inside a 9 x 13-inch (22.86 x 33.02) oven dish.
11. Grate the Parmesan cheese & mozzarella cheese.
12. Begin by spreading meat sauce on the bottom of your oven dish.
Place the first layer of sliced zucchini. This lasagna will have 3 layers. Spread the meat sauce, the grated Parmesan & shredded mozzarella between each layer.
13. Cover with parchment paper & foil. Bake in preheated 390F/193C oven for 35 minutes. Position dish on second to last oven rack.
14. Plate & serve with extra cheese. Top with a parsley leaf.
